I have a recipe in which you bake meringues, then fill them with mousse. These aren’t the type of meringues that you bake and dry out. When they’re done, they are moussey/marshmallow-y.

If I swap out the white sugar for brown, will they bake differently? I know they’ll look different and may taste more caramelly (that’s what I want), but I don’t want them to collapse or something.

Is there a big chemical difference between baking with white sugar versus brown? I’ve substituted one for the other in brownies before, but that’s a different process, you don’t need to stabilize egg whites.

Any thoughts? I want to make the meringues and fill them with pumpkin mousse.

Honestly I don’t know about chemical differences between the brown sugar and the white. I am curious how a moist brown sugar would work though and often it’s trial and error with baking. I’d give it a try and know that it may not work. maybe if you had brown sugar that had dried out. The other choice is to get the raw torbanado sugar that has been granulated but isn’t processed. It’s what I use.

Sorry I can’t help with the actual swap. It would be interesting to know how it works out. what if you made your meringues with the white and made a little brown sugar caramel like sauce to drizzle over it?

okay. i am assuming you are in school again, and that hours are 8:45-3:30. Cancel all extra curriculars you might be in. If you have extra time in between the home work, get social, in shape for soccer, and finish guitar hero III. Talk to your teachers in their classes, or when they have freetime during or after school. It shouldn’t take longer then 5-10 minutes per teacher. Oh, I don’t know if you go to church on sunday, so I’m not starting sunday’s schedule until noon

She only signed on for a one season deal and though people like her, I think she should take some time off and concentrate on her daughter, AJ’s kids (I’m sure she won’t leave them out in the cold) and her career. I guess we’ll just have to wait until the reunion show airs and see what her plans are (though she may not even be on it b/c of AJ and her uncle’s death).

that’s anyone’s guess especially in light of the tragic, senseless, brutal murder of her ex-fiance this past friday night. they are filming the RHOA reunion in the next week or so, maybe we’ll find out then. Kandi has SO much talent that if she choses to be on the show or not, she’ll succeed. my condolences to Kandi and AJ’s families and loved ones.

I’m pretty sure she will be. A lot of people like her. The producers got rid of DeShawn Snow because she was too boring. Kandi has a career and a lot of excitement that goes along with it. If she’s really planning on re-launching a singing career, I think it would be smart for her to do another season to maybe boost record sales.

I hope they get rid of that moron Sheree though. I cannot stand her!
